Expect to start seeing some early spring produce in farm stands and markets. Look for locally grown asparagus and greens, like kale, collards and spinach this May.
This is prime month for asparagus, so make sure to pick some up! This veggie should be bright green and stand firm, with no signs of shriveling. The tips should be compact and pointed, with the fat ones being better than skinny.
Asparagus is delightful when seasoned with your favorite spices, drizzled with olive oil and roasted in the oven.
